You Call That Busy?

 

I have been so busy today – busy doing absolutely nothing!  I think I have been out from home every single day this week and it is starting to tell.  I’m tired!

Add to that Mittens the Cat not settling to sleep last night and keeping me awake until I finally gave up and kicked her out of my room.

I think she deliberately waited until she thought I was asleep and would then walk over me.  Grrrr!

I suppose, “doing nothing” is a bit of a misnomer.  It is almost impossible to do nothing at all. 

The basic housework got completed (make the bed, wash the dishes, and so on) and then I spent a good part of the day looking for dinner recipes online and in my vast collection of recipe books.


Buckwheat Salad Bowl (recipe below)


I am changing my lifestyle a little, so a lot of my stand-by recipes no longer are suitable.  The search is on for meals that are mostly plant-based, as well as easy and quick to prepare. 

Lunch was a Buckwheat Salad Bowl, and dinner tonight was a lamb cutlet with steamed kumara, carrot and asparagus. 

It will be interesting to see how things go.

BUCKWHEAT SALAD BOWL

1 cup cooked buckwheat groats

1 hard-boiled egg, roughly chopped

A little lemon zest

1 finely chopped spring onion (scallion)

½ cup chopped tomato

½ cup diced cucumber

Shredded lettuce

Place lettuce in the base of a bowl and top with other ingredients.  Pour over extra-virgin olive oil (or a French Dressing) and toss lightly before garnishing with some viola petals.

Serves 1.

Mittens, that's a good trick isn't it? ....to walk on them just as they fall asleep...😸 I weigh over 6kg (they are making me diet and exercise but it doesn't seem to be wrking) so I stand, with as much weight as I can muster on one foot, in the softest exposed part of the human. And i wait there until they walk up and move. F says she likes the look of that buckwheat salad and will give it a go. She uses a lot of buckwheat and buckwheat flour (we even used to grow it), but mostly uses it in place of wheat in tabbouleh and for making blini pancakes. We did make porridge with it once when out of oats and even the Scottish visitor didn't realize the substitution.

  3. My Poppy walks over me at about 6 am (even when the clocks have gone back an hour). She finds a hand and when I rub her ears she goes back to sleep, and so do I. Valxx

  4. Oh yes, restless cats are a pain - of course I am not a pain when I am restless and Tinker is sleeping... he is so laid back that I can move my legs across the bed under him and he doesn't move...
    Love the look of the salad, and I eat mainly plant based now and am loving it. I have to leave the cucumber out as it and I are not friends.
    Take care and 'stop' when you need to - I have learnt that the hard way recently!

  5. Looks like a good salad. We make something quite similar with quinoa instead of buckwheat.

  6. We’ve been eating more plant-based too, Margaret. Quinoa is so tasty with roasted vegetables or dried fruit and a citrus based homemade dressing. We eat it several times a week now.

    The salad you made looks delicious!

  7. Mittens' has two cousins here that are permanently locked out if the bedroom because they will not just lay down. I have never seen cars like these. And to top off the not being still, Bubbie likes to knock everthng off the nightstand or anything else he can do.

  8. That salad is the sort of thing Ng I'm trying to eat. I avoid meat, eat mainly plant based and feel so much better.

  9. One of our cats does that, except Mr Bruno likes to put his wet nose in our ears around 4am when he's hungry.

  10. Before I lived in New Zealand I had never used kumera (or sweet potato as it is referred to in the UK) but since then it has become part of my staple diet - usually in soup. I find myself eating less and less red meat although that is not a conscious decision - just a choice made as I decide my meals day to day.

    1. It seems that as we grow older a lot of us just naturally eat less red meat. Not sure why that is.

  11. I have no idea what Buckwheat groats are but I think the salad would be good if I substituted Barley. I like Barley.

    1. Buckwheat is used as a cereal grain, similar to quinoa. I like the sound of using barley as I like that too (it has such a nice chewy texture to it).

  13. Even on the days when we do nothing most of us end up doing something, don't we? Today will be one of those do nothing days for me. Just love the look of that salad, a really nice lunch option. I rarely eat red meat these days, it always seems just a bit too heavy for me. Bring on the chicken and fish for me!

  14. Wow! Your meals sound healthy and delicious. Could it be that your cat and mine have been talking to each other. I've gone through the same thing with Dumperoo. I am having awful shoulder pain and spend half my nights on the couch now. Dumperoo walks on me until I feel like screaming.
